Left Over Dal's Paratha - Pancakes made from Lentils curry

I find it quite exciting to prepare an altogether new dish from the leftovers in the fridge. Its a win-win moment for me. Leftover Dal's Paratha (pancakes made from lentils curry) is one such recipe which my MIL (mother-in-law) introduced me to. 

I usually make these paratha's from leftover Maa Chole ki Dal (Yellow Gram & Split Black Lentils Curry) but you could use any dal of choice. Its delicious, healthy & so easy to make that I find myself making extra dal (lentils curry) just so that I can make these dal parathas next morning. Its a great breakfast/brunch option ready in no time so perfect for a weekend as well as a weekday. 

Now to the recipe...

Ingredients: (makes 4-6 parathas)
1 cup of leftover dal (lentils curry) (I have used Maa Chole ki Dal)
1 cup wheat flour or as needed to make the dough
1 tbsp gram flour (besan)
1/4 onion finely chopped
2 tbsp coriander finely chopped
1 tsp red chilli powder
1 tsp dry mango powder (amchur)
1 tsp cumin powder
1 tsp ginger paste
1 tsp green chilli paste (or 2-3 green chillies finely chopped
1 tbsp of oil
salt to taste
some ghee/butter

Mix all the ingredients together (except oil & butter) & kneed into a firm dough. Sprinkle some oil on it & kneed again. Cover the dough with a lid or plastic wrap & let it sit for about 15 mins. 

Divide the dough into 4-6 equal size balls & roll each ball into a 6-7 inch circle using rolling pin. Use dry wheat flour as required to roll the paratha. The paratha should be thicker than regular chapati/tortilla. 
Heat the pan to a medium heat. Once hot put the paratha on the pan. Roast it for about a minute & then flip. While the other side is cooking, apply some butter/ghee to the top part of the paratha. Again flip & let the side with butter cook. repeat the same step with the other side too. 
Once both sides are well cooked, remove from pan. Repeat the above steps to complete the remaining paratha's. Refrigerate any leftover dough (the dough is good for 1-2 days if stored in refrigerator) 

That's it, this delicious and nutritious Dal Paratha is ready. Serve it hot with pickle or tomato ketchup or Green Chutney or simply with butter. Enjoy!!

I had a lot of dal leftover and made the chapatis by mixing up some chopped spring onion, parsley, green chillies and a tablespoon of besan with atta. Served the chappatis with some thick yoghurt and lime pickle. The family just loved it. Thanks again!
