That's when I like to mix the veggies together to give me my versatile Mix Vegetable Curry. Versatile because it gives me an option of serving it with Roti/Paratha (Indian bread) or Rice or even as a gravy layer for Vegetable Biryani.

Vegetable Spring Rolls

Vegetable Spring rolls are ageless appetizers in my Chinese cuisine closet, my granny loves it, the kids in my family love it - it works in any kind of party. It is primarily made by rolling a mixture of shredded vegetables like cabbage, carrot, bell peppers  & sometimes even noodles & sprouts in to thin spring roll pastry sheets. There are many versions of the stuffing & the ways to cook these i.e. fry or boil or now a days even bake.  But for now, I decided to stick with the traditional Indo-chinese way of deep frying. Frying gives these spring rolls a crunchy texture which I definitely like.

Poha - Pohe - Flattened rice with Onions, Potato & Green peas

Pohe/Poha (Flattened rice) is a very popular Indian breakfast dish. Its most basic version is prepared with only onions referred to as Onion (kanda or pyaaz) Pohe but you can add potato & green peas to the basic version to make it Kanda Batata Vatana  (Onion Potato Green peas) Pohe. This is the way I like to make as then it gives me wholesome dish.

Chickpea Burger - Veg Burger

It breaks my heart to hear burgers are catergorized as junk food. They are soooo delicious just like all the members of junk food family. Since we are living in a calorie conscious world we need to watch what we eat, not that I munch a burger every other day but every calorie counts, right. So then why not replace the deep fried patty with a healthy chickpea shallow fried patty!!?? I was pleasantly surprised with the outcome, it tastes so much better that you must try it. 
Traditionally burger & french fries are a great combo, but since I wanted to keep my junk food at minimum I opted them out.

Sevai Upma - Vermicelli Upma

Couple of years ago I started feeling saturated with the usual (read lazy) breakfast options, and I was compelled to start exploring new breakfast options, to feed my soul with freshness to begin my day. And that is when I discovered my Sevai (Vermicelli) Upma recipe. Basically I added the main ingredient vermicelli from the regular sweet dish my mom makes (Sevai kheer) to the Maggi recipe my granny makes. Ever since I made this, we all have been hooked to it, so much so that it is present atleast once a week on our breakfast table.

Maa Chole ki Dal is a curry dish made from combination of two lentils - Chana Dal (yellow Gram) & split black urad dal (black lentils). Its a popular north indian dish & tastes great with Rice/Roti/Indian bread of your choice.

Chilli Garlic Noodles

My hubby is a big Chinese cuisine Fan & Noodles are his favorite. So after trying out a couple of restaurants we both knew that the kind of noodles we like (Indo Chinese) are best when they are made at home. Almost every alternate weekend we like eating noodles, so I keep trying new options. After Vegetable Noodles here is my version of Chilli Garlic noodles using the ready made Chilli Garlic sauce that is available in market.

Eggless Banana Chocolate Chip Muffins

Do you have some ripe bananas at home which you were planning to throw away as they are no longer pretty or look edible. I'd say don't ! I now have a delicious way to save one from a guilt trip of throwing away bananas. Banana Chocolate chip Muffins is an apt recipe for using your ripe bananas. The more ripe the banana is the better it is, as then you have to add less sugar. A total win win!!
