Pav Bhaji

Pav Bhaji is a famous Indian fast food dish that originated in the central & western states of India and now well spread due to its immense popularity. Pav Bhaji as the name says comprises of a Pav (bread) that is served with a Bhaji, a thick and smooth mix vegetable curry dish. Bhaji is basically made of onion, tomato & potato gravy with the addition of other veggies like capsicum (bell pepper), cauliflower, green peas all finely mashed & well integrated with the tomato gravy. Pav Bhaji is served with the pav soaked in butter & lightly roasted & bhaji garnished with finely chopped onion, some butter & dash of lemon.

Pav - Ladi Pav - White Bread Dinner Rolls

Am a big-time bread fan, can eat it for all my three meals. Baking Pav (White bread dinner rolls) is my first bread baking experience and wow what an experience it was!! Thoroughly enjoyed it. Addicted to bread baking now so you will be seeing more bread recipes on this space.  Recommend bread baking to all, must try at least once !!

Vanilla Cupcake with Cream Cheese Frosting - Eggless

After my Banana Chocolate chip Muffins recipe, here is a my first cupcake recipe - Vanilla Cupcake with Cream Cheese Frosting , a simple & delicious treat. Keeping majority ingredients same as used for my Basic Vanilla Sponge Cake with slight alterations I was able to make these yummy cupcakes. Simple butter, cream cheese & sugar frosting topped on the cupcakes makes it the most delicious dessert.

Shahi Paneer is one of the very first recipes I learnt from my MIL thus making this recipe very close to my heart & truly special. She is an awesome cook. Even today when I make this dish, I recollect her words & her explanation. Anyone & everyone who has had this dish, keeps asking for more.

Peach Raspberry & Cucumber Salad

Peach Raspberry & Cucumber Salad is refreshing fruit salad which goes perfect as evening snack. Its a great alternative to fried/junk snack items especially if you are watching your weight or even otherwise. Just like other salads, this recipe calls for mixing the main ingredients (fruits here) with the dressing which is made of mint, lemon juice, honey & roasted cumin powder. The addition of cucumber provides the right balance of crunchiness to this otherwise soft fruit salad.

Spaghetti with Marinara sauce

Spaghetti with Marinara sauce is basic Italian preparation where the Spaghetti (long thin round strands or noodle like pasta) is served with a tangy tomato, onion, garlic & herbs sauce famously known as Marinara sauce. Its a simple & versatile sauce which can be used for pasta or for even as your pizza sauce. Traditionally this sauce is used to add flavor to pasta, rice or pizza.

Onion Tomato Capsicum Rice


Today when I opened my fridge I saw a variety of left over food items & it became a puzzle for me, with only one aim, have a delicious final product at my lunch table. Sounded like Déjà vu ? This is a common situation for most of us, and I enjoy it because this breeds creativity & innovation, which eventually helps one grow in the art of cooking. 
One of my such creations is Onion Tomato Capsicum Rice. It is also possibly one of the best ways to use left over rice. Bell peppers are something which you will always find in my refrigerator. So basically pulled out all what I could reach my hands to.  Neither fancy cutting nor cooking & this delectable one pot meal is ready in no time.

Tomato Basil Soup


Ever since childhood my favorite soup has been Tomato Soup. In restaurants, I would order it even without looking at the menu (in India, almost every restaurant menu had it). Even now, given an option be it my office cafeteria or for a lunch/brunch buffet at any restaurant I always tend to pick Tomato soup. There are so many varieties - plain tomato soup, cream of tomato, chunky tomato soup this list is never ending. But lately, I have been a huge fan of the Tomato Basil soup. Since this will be the first soup recipe on ShwetaintheKitchen I wanted to start with my favorite.

Lobhia - Chawli Chi Usal - Black Eyed Peas Curry

Black Eyed Beans are known differently in different parts of India. In North India they are referred to as Lobhia whereas in the West as Chawli. Which ever name they go by the basic way to make this curry dish remains more or less the same.  Lobia/Chawli chi Usal is a simple Indian main-course dish cooked in a onion tomato gravy & can be served either dry or in gravy form. Dry version goes well with Roti/Chapati/Indian bread whereas the gravy version is more suitable for Rice. Having said that, this is not a hard & fast rule.

Sevai Kheer - Vermicelli Kheer - Vermicelli Pudding

There are very few fasts that I observe and Angarika Sankashti (chathurti that falls on a Tuesday) in one of them. This fast ends at night where you prepare your meal without using any onion garlic & seal it with a sweet dish. Mom usually makes Sevai Kheer (her patent) for such occasions and I would fondly eat this in comparison to the other members of the Kheer family. Also during a recently chito chat with my MIL, she expressed her content over the quick cooking time of this dish which is so true. All in all, I finally decided to make Sevai Kheer for this auspicious occasion.
