Lauki Kofta Curry - Ghiya Kofta Curry - Bottle Gourd Dumplings Curry

Lauki Kofta Curry is a delicious Indian gravy dish which mainly comprises of two parts - Gravy made from onion tomato base & dumplings made from mixture of Bottle gourd, gram flour & flavored with spices. These two mixed together & served make an excellent combination with Rice/Roti. The Lauki Kofta's (bottle gourd dumplings) on their own can be enjoyed as appetizers or as evening snacks with tea. This is one of those two in one recipes where you can enjoy it as appetizer or as entree/main-course.

Fruit Salad - Dessert Recipe


Fruit Salad is a very simple,easy & quick to make Dessert. This is my Mom's recipe & she often made this when we were kids.  Since this recipe is very easy I was contemplating whether I should post it or not. But then thought with the festive season kicking in, parties/celebrations/get-together happening there will be need to make some fancy yet quick dessert. Fruits mixed with milk & condensed milk is my all time favorite dessert. It can be made ahead of time & stored in refrigerator till time to serve. Best part is its loved by all age-groups.

Phodnicha Bhaat - Spicy Tempered Leftover Rice

Phodnicha Bhaat is a simple & easy to make Indian Maharashtrian recipe usually made by tempering the leftover rice. With barely any ingredients used this dish gives your leftover rice a completely different flavor, taste & color. Although traditionally this recipe was made to use the leftover rice, you can still make it using freshly cooked rice. Just ensure the cooked rice is cooled properly before making this dish. Hot rice used for this recipe would cause the rice granules to stick & become lumpy. Serve this rice either with a hot pickle or Raita/salad.

Boneless Chicken Masala

Boneless Chicken Masala is an Indian onion tomato based gravy dish which tastes excellent with both Rice or any Indian bread of your choice. With the adjustment of water consistency this dish can easily be transformed into a gravy dish but I prefer to prepare this dish slightly on the thicker side which not only helps coating the chicken but also to bring out the gravy flavor more with every bite.
