Tomato Mozzarella Pesto Sandwich

Tomato Mozzarella Pesto Sandwich is our current household favorite. As the name suggests its a simple Italian sandwich made with tomato, fresh mozzarella cheese and basil pesto. I like to add some salad (lettuce) leaves (to get my dose of greens) and also some roasted tomatoes. These really add a great flavor and taste to the sandwich. Lastly grill this on slow flame allowing the cheese to melt giving it a great texture and taste.

Pumpkin Halwa - Pethe Ka Halwa - Kaddu Ka Halwa

Pethe Ka Halwa or Pumpkin Pudding is an Indian dessert made using very few ingredients like Pumpkin, sugar, cardamom, ghee (clarified butter) and dry fruits. I like to call this a healthy Dessert....why? Reason is although clarified butter gives the halwa a nice and rich taste you can still cook it in very little ghee and sugar and it will still taste yumm. In fact depending on how sweet your pumpkin is you may not really need that much sugar.  So a complete win-win for all the dessert lovers. Also you can enjoy this sweet during fasts just avoid the black cardamom.

Basil Pesto

Basil Pesto is a classic Italian sauce that is traditionally made by pounding/grounding the ingredients like fresh basil, pine nuts, garlic & olive oil in a mortar using circular motion of the pestle and finally adding shredded cheese (parmigiano reggiano) to the ground paste. But now a days many use food processors, mixers to quicken the process as I did for this recipe. I find Pesto quite similar to our Indian Green chutney which we prepare using Mint & Coriander, green chilies.  This Pesto can be served tossed with cooked pasta or used as spread for sandwiches and rolls.

Spaghetti Aglio E Olio - Spaghetti with Garlic and Oil

Spaghetti Aglio E Olio is a very simple and easy traditional Italian pasta dish. "Aglio E Olio" means "Garlic and Oil" in Italian. So as per the name its literally spaghetti pasta cooked with garlic and oil. This dish is made by cooking garlic in oil on low heat till garlic is light brown and slightly crispy. Seasoning can be as simple as salt pepper and parsley or you can add some some herbs of your choice (like I have done for this recipe). This garlic and herbs flavor infused oil is then mixed with spaghetti and topped with Parmigiano Reggiano to add some nutty texture. If you love garlic you will surely love this pasta dish.

Baingan Bharta (Spicy Smoked Eggplant) is a North Indian recipe made using roasted and mashed eggplant that is cooked with onion, tomato, ginger and Indian spices. Traditionally the eggplant is roasted over charcoal or direct fire to give it a smoky flavor. But you can also grill the eggplant in an oven like I did for this recipe. Its much neater and clean process that way. This dish can be served with Roti/Chapati/Naan or any Indian bread of your choice.

Caramelized Onion and Rosemary Focaccia

Focaccia is an oven baked Italian flat-bread that is topped with herbs and various other toppings. Focaccia dough is similar to pizza dough just that the amount of leavening agent (yeast) used in focaccia is slightly more than that of pizza. This gives the focaccia a slightly thicker base in comparison to the flat and flexible pizza base. I love baking breads and Focaccia was on my list for long. Herb Focaccia is the most popular one but the taste and texture caramelized onions give to focaccia or for that matter to any recipe is delicious. Hence thought of baking Caramelized Onion and Rosemary Focaccia this time and we all absolutely loved it.

Bhindi Do Pyaza - Okra Onion Stir Fry

Bhindi Do Pyaza - Okra Onion Stir Fry is a very popular Indian sabzi/side dish that is served/eaten with Naan/Roti/Chapati. Bhindi is also popularly known as Okra or lady finger and is one of our favorite vegetable. There are different theories and methods associated w.r.t preparation style for this dish due to its name "Do Pyaza" which in literal translation is 2 onions. Some say it was named "Do Pyaza" as the onions are used twice during the cooking process once to make the gravy and then as garnish where as some say its the quantity of onions used. Since I make this in stir fry style (not gravy) I like to follow the later theory i.e. use two onions. That way its simple, quick and delicious all at the same time.

Helloooo !! Finally back after a short hiatus. As they say ‘Don’t forget every once a while to stop and smell the roses…’ that’s what I have been doing since my last recipe post. With utmost joy I’d like to announce that on April 22nd 2013 my husband and I got blessed with a baby girl, our first child, Rhea. Since then life is running around her charms. Fusilli with Roasted Tomato & Basil Pesto is an Italian main-course dish (Entree) comprising of pasta mixed with a sauce called Pesto & garnished with cheese. Broccoli, Mushroom & Bell Peppers in Chilli Garlic Sauce is a Indo-Chinese gravy dish that can be served with Rice/noodles. My hubby & me both love Indo-Chinese food so much that we eat it almost every week. But my taste-buds are super-spoilt so I can easily  get bored eating the same noodles/gravy dish every week. That drives me to try something new every time. One such weekend I thought why not try some gravy dish that can go with white rice. I had these three veggies Broccoli, Mushroom & Bell Pepper  available so started with them. The final dish turned out so good that I had to share it with you all. I named the sauce Chilli Garlic as I could feel the distinct flavor of garlic & chilli while relishing this gravy.
