Tomato Mozzarella Pesto Sandwich

Tomato Mozzarella Pesto Sandwich is our current household favorite. As the name suggests its a simple Italian sandwich made with tomato, fresh mozzarella cheese and basil pesto. I like to add some salad (lettuce) leaves (to get my dose of greens) and also some roasted tomatoes. These really add a great flavor and taste to the sandwich. Lastly grill this on slow flame allowing the cheese to melt giving it a great texture and taste. 

The amount of ingredients to be used for this sandwich are as per your choice, you can add more/less cheese or tomatoes if you like and skip the salad leaves and roasted tomatoes. This sandwich will still taste yummy. This sandwich comes together in no time. We love to have this for a quick lunch or snack or even dinner. Its the perfect picnic sandwich just choose a thicker bread like Italian baguette or Ciabatta to avoid your sandwich from becoming soggy. 

Now to the recipe...

Few bread slices (am using wholegrain Oatnut Bread)
Couple of tbsp butter
1/4 cup Basil Pesto 
8Oz ball of Fresh mozzarella cheese sliced uniformly (thin or thick as you like)
1 big tomato cut in thin uniform slices
Handful of salad spring greens or lettuce leaves
1/4 cup Roasted tomatoes 
salt and pepper to taste

 Take two slices and slightly toast the inside till its light brown. Now apply butter followed by pesto to this toasted side. Keep one slice aside and top the other with uniform layer of fresh Mozzarella slices. Sprinkle some salt and pepper. Now add a uniform layer of the tomato slices and sprinkle some salt and pepper. 

Add as little or as much lettuce you like and tear some mozzarella pieces and add randomly. Now add the roasted tomatoes and cover with the other slice (applied with butter and pesto). Heat a flat pan or grill and on slow flame let the sandwich toast on one side till it gets a nice golden brown color. Then flip and toast the other side too. Slow flame helps the cheese to melt giving this sandwich altogether a different texture and taste. 


  • I have used wholegrain Oatnut bread for this recipe but you can use any bread of you choice. 
  • The amount of cheese, tomato and salad greens that needs to be added to the sandwich is totally as per your choice.
  • I like to add roasted tomatoes as they enhance the flavor but without them too this sandwich tastes delicious. 
  • The Basil Pesto used for this recipe is the homemade one. The link to recipe is here. You can make one or use the store bought one. 

That's it, our juicy and flavorful Tomato Mozzarella Pesto Sandwich is ready. Slice it and enjoy it for lunch, brunch, dinner or even snacks.
