Whole Wheat Orange Cake with Orange Glaze

Whole Wheat Orange Cake with Orange Glaze is a light moist and spongy citrus cake that is perfect as a dessert or a side with your cuppa. The best part about this cake is you need no fancy ingredients to bake it. The combination of whole wheat, oil, yogurt and orange juice really works wonders.

Initially during the recipe testing I made just the cake and not the glaze. Hubs and me really loved it and it reminded me of the orange cream biscuits I gorged as a kid. Glaze really takes the cake flavor to another level but if you want to make just the cake that on it own is equally delicious. For those who don't like their cakes that sweet then you can reduce the amount of sugar in cake if you are planning to glaze the cake. This cake stays fresh for 3-4 days at room temperature.  I have used a 9 inch round baking pan for this recipe. But you can bake it in square or even as a loaf or cupcakes. Its the perfect treat for kids lunch box or for those potlucks/parties.

Now to the recipe...

For the Orange Cake:
1 cup of whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/2 cup yogurt
1/2 cup fresh orange juice
1/4 cup oil (I used canola oil)
1/2 tsp vanilla extract
1 tsp orange zest

For the Orange Glaze:

1 cup of powdered sugar
2 tbsp of fresh orange juice
1 tsp orange zest
Some nuts for garnishing (I used almonds and pistachios)

For the Orange Cake:
Preheat the oven to 350F and line a 9inch round baking pan with parchment paper by spraying some oil on the pan and then stick the parchment paper. spray some more oil on top of  parchment. Keep aside

Now in a bowl whisk together  all the wet ingredients like yogurt, orange juice, oil, vanilla extract and orange zest until smooth. Add sugar and whisk until sugar dissolves. In another bowl sift all the dry ingredients together like whole wheat flour, baking powder, baking soda, salt.

Now add the the dry ingredients to the wet mixture and mix to get a smooth batter (do not over-mix). Pour the batter into the prepped baking pan and bake for 25-30 mins or until a toothpick inserted at the center of cake come out clean. Remove from oven and let it stand in the pan for 5-10 mins after which transfer it onto a wire rack to cool completely before glazing.

For the Orange Glaze:

Mix all the ingredients together to get a runny paste.
Spread a parchment paper below the cake stand so that the drizzled glaze can fall on it. Drizzle the glaze on top of the cake and spread a bit so that its uniform and drips from the side. Allow the glaze to set for couple of hours at room temperature before serving. Top it with some chopped nuts for added crunch.

  • If you find the batter is too thick then add couple of tbsps of oil or orange juice to adjust the consistency.
  • Check the orange juice before adding it to the batter. Preferably a sweet juice and not to bitter should be used for best results

That's it our Whole Wheat Orange Cake with Orange Glaze is ready. Serve it as dessert or as side with your cuppa. Enjoy!

Happy Baking!!
