Instant Ginger Green Chilli Pickle

Instant Ginger Green Chilli Pickle is one of those Indian condiments that doesn't require time to ferment. Its more like marinating the ginger and green chilli in salt and lemon juice. Yes with just these 4 ingredients you have a really tasty condiment ready.  You can serve this pickle immediately or even let it sit for days in refrigerator. It keeps getting better and better (like most pickles) over a period of time. Exact measurements are not a must for this pickle. You could add more green chillies or more ginger or equal quantity depending on your preference.

Baked Indian Spiced Potato Chips - Batata Kachari

Batata Kachari is a simple and easy to make vegan Maharashtrian side dish/snack/appetizer recipe. This recipe requires marinating the potatoes in Indian spices, then coating them with mixture of flour and semolina and baking until crisp and done. Its in a way similar to the regular french fries/wedges just that it has more texture (due to the coating of flour and semolina), taste (from the Indian spices) and is much healthier than the deep fried french fries.

Til Gul - Til Gud Ladoo - Sesame Seeds and Jaggery Balls

Til Gul/Til Gud Ladoos are crunchy sweet balls made of sesame seeds and jaggery. These goodies are usually made during a Hindu festival celebrated in India called Makar Sankranti which falls on 14th January every year.  Its also known as the harvest festival. As per Maharashtrian tradition, these Til Gul Ladoo along with multicolored sugar coated granules are exchanged with friends and family  with a greeting "Til Gul Ghya, God God Bola!" This means : like these sweet goodies always speak good and sweet words for each other. Happy Makar Sankrant to All!!

Onion Potato and Tomato Curry - Onion Potato Tomato Sabzi

Onion Potato & Tomato Curry is a simple Maharahstrian side dish (sabzi/Bhaji) made using basic ingredients which are typically available in the Indian pantry. Inspite of using very few spices/ingredients this dish is extremely flavorful and can be served with Rice or Roti/Chapati. Its one of my favorite dishes to cook as well as eat. The reason being it doesn't require extensive cutting or cooking, gets done pretty quickly and turns out delicious every single time. Cooking exotic dishes every day may not be practical so we definitely need such simple yet delicious recipes at hand.

Avocado Banana Smoothie Recipe

Avocado Banana Smoothie is a creamy, rich and nutritious beverage consisting of the main ingredients banana and avocado along with milk some chia seeds, and milled flax seed. This can be made Vegan by using Almond or Soy milk. Its a great breakfast or snack option and is one of my go to smoothies for my daughter. Its a very healthy drink not only for kids but also for adults. 



Banana Raisin Oatmeal

Banana Raisin Oatmeal has been my go to breakfast these days especially on the weekdays not only because its quick but because its healthy,nutritious, filling,  and equally delicious. Don't we all want to eat healthy this year. Nothing better than oats to begin your day.  Its keep me full longer cutting down my cravings to snack and helps me go through lunch. I keep alternating between my Egg Omelet and this oatmeal pretty much through out the week.
